Roasted Rhubarb

  • 4 cups chopped Rhubarb
  • 1/2 cup sugar (can use honey or maple syrup
  • 1/4 cup orange or lemon juice
  • 2 Tbsp ginger root
  • 1 Txp grated orange or lemon peel

Combine in a baking pan
Spread evenly and bake in a preheated oven at 450 until rhubarb is soft but retaining shape (Approx 25 min)
Serve with yoghurt, french toast or ice cream.
